Worth the truffle

What is it about truffles that makes us swoon? These rare delicacies require immense persistence and patience to cultivate and can be extremely tricky to forage. They grow on the roots of certain trees, like oak, hazel and beech – but only when conditions are just right. Even then, it can take years for these special fungi spores to mature.

The alluring scent of a truffle is made up of chemicals that mimic mammalian reproductive pheromones, making them nothing short of irresistible to the human nose. This seductive perfume is unique to the region in which they’re grow, with black truffles generally giving off a more earthy fragrance than the delicate bouquet of their white counterparts.

For a truffle-inspired food and wine adventures, check out these winter events coming up at Mandoon Estate and Voyager Estate in Western Australia.
